ATAGO PAL-BX|SALT+15 for Simultaneous Brix and Salt Measurement in Food Samples

Measure Brix and Salt with One Compact Instrument

The ATAGO PAL-BX|SALT+15 combines a digital refractometer and salt meter in one handheld instrument. An optical prism measures Brix concentration, while a titanium electrode measures salt concentration, allowing both values to be checked from the same sample.

This combination is particularly useful in food processing and product development, where the balance between sweetness, concentration and salt content can strongly influence taste, recipe consistency and quality control.

Measure Concentrated Samples Without Dilution

The PAL-BX|SALT+15 is designed for concentrated food samples such as sauces where conventional salt testing may require dilution before measurement. Its extended salt range allows salt concentrations up to 15.00% to be measured directly.

ATAGO also provides a user-scale function for high-Brix samples, allowing concentrated products such as soy sauce to be evaluated without the extra dilution step that can slow routine testing and introduce preparation error.

Fast Results with Only a Few Drops

Only 2 to 3 drops of sample are required. After the sample is placed on the measuring area and the START key is pressed, the result is displayed in approximately 3 seconds.

The compact 100 g instrument is therefore practical for production-floor checks, recipe adjustment, incoming-product inspection and laboratory quality control.

Check the Balance Between Brix and Salt

The PAL-BX|SALT+15 measures both concentration and salt so operators can evaluate the relationship between the two values rather than testing them separately. This is useful for foods where the perceived flavour depends on the interaction between dissolved solids and salt.

The instrument also includes a salt-reduction index function. Pressing the heart key displays the ratio of salt concentration to Brix, providing an additional reference when comparing recipes or reformulating products.

Q&A

Why measure Brix and salt together?

In many foods, taste depends on the relationship between dissolved solids and salt rather than either value alone. Measuring both with one instrument makes it easier to compare batches, adjust recipes and maintain consistent flavour.

Can concentrated sauces be tested without dilution?

Yes. The PAL-BX|SALT+15 is specifically designed to handle concentrated samples and can measure salt concentrations up to 15.00% directly. Its user-scale function is intended for high-Brix products such as soy sauce where dilution would otherwise be required.

How much sample is needed?

Only 2 to 3 drops are required for a measurement, which is useful when sample quantity is limited or when many checks must be made during production.

How quickly is the result displayed?

The instrument typically displays the measurement in about 3 seconds after the START key is pressed.

What does the heart key show?

The heart key displays the salt-reduction index, calculated as salt concentration divided by Brix. This provides an additional reference when comparing the relationship between concentration and salt in different formulations.

Can hot samples be measured?

The PAL-BX|SALT+15 includes temperature-compensation functionality, allowing measurements to be corrected for sample-temperature effects within the instrument’s supported operating conditions. For best repeatability, follow ATAGO’s sample-handling instructions.

Is the unit suitable for production-floor use?

Yes. Its compact 100 g design, approximately 3-second response and IP65 protection make it practical for routine checks outside a dedicated laboratory.

How should the measuring area be cleaned?

After testing, remove the sample and clean the prism and salt-sensing area according to ATAGO’s instructions so residues do not affect subsequent measurements. This is especially important with sticky, salty or concentrated food samples.
